1 cup water
1 medium onion, diced
2-3 medium potatoes, chopped
1 ounce dulse
½ pound fresh or frozen corn
1 quart plain soy milk (not reduced fat)
White or yellow miso, to taste
Freshly ground pepper, to taste
¼- ½ spoon tarragon
In a medium saucepan, bring water to boil. Add the onion and potatoes, and cook for 5-10 minutes until tender. Add the dulse and corn and cook for 1 minute.
Pour in the soy milk and reduce heat to a simmer (do not allow soy mild to boil). Stir occasionally. When the dulse separates, add the miso, pepper and tarragon. Stir and serve.
